How to make a veg frankie from the leftover foods?

Frankies are the Indian version of wraps. Not to be confused with Frankfurters, They are a very buttery whole-wheat tortilla filled with almost anything. Fillings can range from spicy chicken, cottage cheese, veggies, etc. The Tortillas are rolled like a cigar and consumed off the hook. It is a typical form of fast food at its best. At any given time in a house, there is always leftover food. All you have to do is keep an eye out. To be a good manager of left over food, it is important for one to have a basic understanding of food handling and storage. One must follow the next few rules to do just that:
Here’s how you can put together the veg Frankie with leftover vegetables Ingredients Most of the ingredients used in the Frankie do not go bad, so putting together a Frankie from leftovers is not a big deal. 4 whole wheat tortillas – Heat the tortillas 1 egg beaten in with a little water, 3 tbsp of chopped cilantro leaves 1 thinly slices small onion 2 small finely chopped thai green chillies 2 finely minced garlic cloves 1 piece of ginger, peeled and minced ½ tsp of turmeric 1 tsp of cumin powder ¼ tsp red chilli powder 1 tsp chaat spice (easily available at any Indian grocery store) juice of ½ a lime salt & pepper 2-3 tbsp oil (vegetable) FILLING: Vegetables: you can use a wide range of vegetables depending on the ones you have at your home. Check the veggies for odour and keep track of the time they have been around. You can use veggies such as bell peppers, zucchini, snow peas, sugar snap peas, carrots, yellow squash, mushrooms, tender young green beans (haricot vert), sweet corn, peas etc. Trim the vegetables into small pieces. Blanch the snow peas, green beans and sugar snap peas in a large pot of boiling salted water for about a minute. Remove and drop into ice water. This will set their green colour in. Drain, pat dry and set aside for later. Add 2 tbsp oil in a large wok on high heat. Add onion when hot and stir fry until onion is slightly softened. Add the ginger, garlic, and green chillies. Now add all of the spices (cumin, turmeric, red chili powder, chaat spice and salt and pepper). Add the veggies in batches. Stir fry until the veggies are slightly cooked but crisp. Add lime juice and some cilantro leaves. Mix well and set aside. Add ½ tbsp oil in a large skillet on medium low heat, and add the tortillas. Brush the egg wash on the tortilla and flip. Let it cook for a few minutes and brush egg wash on the other side, flip again and cook for about 2 minutes. Take the tortilla to a cutting board and let it cool. Add a few table spoons of the filling and roll into cigar shape. Garnish with chopped cilantro leaves and serve. |
