Broccoli fritters Recipe - Ingredients: Finely diced broccoli 1 head Eggs, beaten (6, large) Onion 1, diced Minced garlic 2 cloves Grated parmesan cheese 1 cup Cornmeal 2 cups Salt To taste Oil For frying
Method: In a large mixing bowl, combine the broccoli, eggs, onion, salt and garlic and mix them well. Then, stir in the cornmeal and the cheese, and mix them in too. Form the mixture into patties and keep them aside for a few minutes. In a skillet, heat about one inch of oil and place the patties in the hot oil. Flip the patties over, as one side gets brown. This snack is a favorite with most children.
Broccoli and Cheese Casserole Recipe Ingredients: Finely diced broccoli 1 head Mushroom soup 1 can Cream cheese 1 jar Rice, uncooked 1 cup Water 1 cup Salt and pepper To taste
Method: In a medium sized pot, bring the water to a boil for about a minute and add the mushroom soup to it. Bring it to a boil and after a few minutes, add the diced broccoli, rice and cheese to the mushroom soup. Let the ingredients cook together, till the rice and broccoli are done. Add salt and pepper (or any other herbs and seasonings). You could also bake the ingredients in an oven instead of cooking it on a stove top.
