Best Broccoli Recipes

My husband hates broccoli and now my daughter is refusing to eat it too. Is there a way to disguise the taste?

Getting all the members in your family to eat healthy food is a big challenge. The common perspective is that healthy food is not as tasty as foods that are high in fats, cholesterol, and sodium. This problem is much worse in the case of kids, who are picky eaters, as they tend to pick up the habits of their parents or the other members in the house. Make sure that you get your husband to have his veggies as this will help to set a good example for your daughter. Getting your daughter to eat broccoli is going to be quite a task that will require some creativity and a lot of patience and persistence.


The taste of broccoli can easily be disguised to ensure that your daughter eats it and gets all the vitamins and minerals that are present in this nutritious vegetable. You can start off with simple alterations, like chopping the broccoli very finely and then slipping it into a rice and cheese dish. You could also add small amounts of chopped broccoli to your daughter’s favorite dishes like pasta or lasagna, disguising the taste with a cheese or marina sauce. Given below are some healthy broccoli recipes that you can try at home:

Broccoli fritters Recipe - Ingredients:
Finely diced broccoli 1 head
Eggs, beaten (6, large)
Onion 1, diced
Minced garlic 2 cloves
Grated parmesan cheese 1 cup
Cornmeal 2 cups
Salt To taste
Oil For frying

Method:
In a large mixing bowl, combine the broccoli, eggs, onion, salt and garlic and mix them well. Then, stir in the cornmeal and the cheese, and mix them in too. Form the mixture into patties and keep them aside for a few minutes. In a skillet, heat about one inch of oil and place the patties in the hot oil. Flip the patties over, as one side gets brown. This snack is a favorite with most children.

Broccoli and Cheese Casserole Recipe
Ingredients:
Finely diced broccoli 1 head
Mushroom soup 1 can
Cream cheese 1 jar
Rice, uncooked 1 cup
Water 1 cup
Salt and pepper To taste

Method:
In a medium sized pot, bring the water to a boil for about a minute and add the mushroom soup to it. Bring it to a boil and after a few minutes, add the diced broccoli, rice and cheese to the mushroom soup. Let the ingredients cook together, till the rice and broccoli are done. Add salt and pepper (or any other herbs and seasonings). You could also bake the ingredients in an oven instead of cooking it on a stove top.
