Toss well to blend the ingredients. Serve. Mini veggie frittatas Ingredients: 2 slice zucchini, 1/8 inch thick 1/8 small cup red bell pepper, seeded and finely chopped ¼ small cup red onion, finely chopped 1 egg white 1/8 cup egg substitute 1/8 teaspoon oregano, dried 1 teaspoon low fat shredded cheddar Canola oil cooking spray Freshly ground black pepper to taste Salt as per taste Method: Line muffin cups with foil cupcake papers or spray 2 cups with canola oil cooking spray. Preheat the oven to 400 degree Fahrenheit. Place zucchini slice at the bottom of the prepared muffin cup. Top it with onions and bell peppers. Take a mixing bowl and beat together egg substitute, eggs, salt, freshly ground pepper to blend them completely. Spoon 1 tablespoon of this mixture in the two muffing cups over the onions and bell pepper. Sprinkle cheese over this mixture evenly. Bake for about 10 minutes or till the frittatas are set. When done use a rubber scraper to remove the frittatas. Serve warm. This recipe yields 2 servings and provides 70 calories and 4 gm fat. Baked seasoned potato chips Ingredients: ½ teaspoon canola oil 2 ounce russet potato Salt to taste Canola cooking spray Method: Spray canola cooking spray at the bottom of the non stick pan. Preheat the oven to 400 degrees Fahrenheit. Wash the potato thoroughly and with a sharp knife cut thin slices of about 1/16 inch thick. Do not peel the potato. Spread the potato slices immediately on the prepared pan to completely cover the bottom of the pan. Sprinkle with salt and lightly spray the tops of the potatoes with canola cooking oil. Bake for about 25 minutes, watch carefully. Remove the chips that are already done and cook the rest till they are brown and crispy. This easy and quick low calorie snack recipe serves 1 and provides 120 calories and 3 gm fat. Spicy Popcorn RecipeIngredients:2 cups air pop popcorns 1 teaspoon chopped nuts (almonds, walnuts and pecans) 1 teaspoon low fat shredded cheese ½ teaspoon butter 1/8 tsp salt 1/8 tsp pepper 1/8 teaspoon red pepper flakes ½ teaspoon chili powder ¼ teaspoon cumin ¼ teaspoon paprika Method: Take a large bowl and combine nuts, popcorn and cheese. Melt the butter in microwave, add all the spices in the melted butter and stir well. Pour this buttery spice mixture on popcorn, toss well and serve. This recipe serves 1 and provides 200 calories and 7 gm fat. |
