Cheesy Baked Potatoes


Cheesy baked potatoes can be eaten at any time and during any season. This comfort dish is easy to prepare and not much hassle when you have to entertain unexpected guests and serve your hungry kids.


Ingredients:

  • Egg: 1 (beaten)
  • Milk: 2 tablespoons
  • Mayonnaise: 2 tablespoons
  • Russet potatoes: 2
  • Salt: ¼ teaspoon
  • Cheddar cheese: ¾ cup
  • Green onion: 2 tablespoons, sliced
  • Bacon strips: 2, cooked
  • Pepper: a pinch
Preparation Time: 1 hour 10 minutes

Directions & Serving Size:

 

  • This recipe will yield approximately 2 servings
  • The potatoes should be baked at 375 degrees till they are tender which should be for approximately one hour.
  • Once the potatoes have cooled down, cut out a thin slice off the top using a spoon. Then scoop out the pulp in such a manner that a thin shell is left.
  • In a separate bowl, mix together the milk, egg, pulp, salt, pepper, mayonnaise and 1/2 a cup of cheese. Add this mixture to each of the potato shells.
  • Once done, top off each potato with the remaining cheese, bacon and onions.
  • Place the potatoes on a baking pan that has not been greased, and then bake them for 25 minutes at 375 degrees F. You can also try recipe for parmesan crusted potatoes
Serving instructions:  
  • Cheesy baked potatoes can be served as an accompaniment to a meal or even as a snack.
  • While serving the cheesy baked potatoes you could serve them with some salad and double shaved ham.

Tips and warnings:

If the top of the potatoes starts to turn brown while baking, you can just cover the top with some silver foil.
