When selecting an artichoke, pick one with good color, well-closed centre leaves and without any bruises or blemishes. Artichokes contain therapeutically valuable oils for aiding liver complaints and can also be used as a diuretic for those suffering from water retention. They are also rich in calcium. Artichokes can be taken as a juice in combination with other juices or you can make ‘artichoke elixir’. This consists of a mixture of artichoke pulp and juices with white wine. |
