Honey-Apricot Recipes with Chilled Frozen Yogurt
Dessert Ingredients:
- 3½ cups apricots, fresh (if availability of fresh apricots is a problem then use 3, 15 ounce cans of unpeeled apricot halves in light syrup, drained)
- 2 tablespoons of honey, amber
- 32 ounce French vanilla yogurt, low fat
- Sliced fresh mint springs or/and fresh apricots for garnish, (optional)
Method:
- Mix half of the chopped apricots with honey and low fat yogurt in a food processor. Preferably use a large food processor. However if you use a small food processor you may blend these three ingredients in two separate batches. Pour this apricot yoghurt mixture in a freezer container (2 quart) and add the remaining apricot pieces to the mixture. Stir well and cover. Keep it in the refrigerator and freeze for 4 to 5 hours until the mixture is firm.
- For a heavy stand electric mixture, chill a mixture bowl and spoon this frozen mixture in the chilled mixer bowls. Beat on medium speed (with an electric blender) till the contents become slight fluffy. Gradually increase the speed and as the contents become fluffy return the mixture to the freezer container. Cover the container with a plastic wrap and freeze for up to 6 hours till the contents become firm.
- Before serving remove the frozen yogurt from the refrigerator and let it stand for about 15 to 20 minutes. Garnish with sliced mint sprigs or apricot slices before serving, if desired. This recipe makes about 12, half cup servings.

- Preferably use fresh apricots if you have a choice between fresh and canned ones.
- To reduce the total fat content of the recipe use only low fat or reduced fat vanilla yogurt.
- The honey used in this recipe is a prudent choice over sugar, as honey not only provides fewer calories as compared to sugar, but also provides other nutrients. Moreover the glycemic index of honey is much lower than sugar, thus it doesn’t cause any insulin or glucose spikes in the body.
- You may substitute honey with any natural sugar or artificial sweetener to make this recipe fit for a person with diabetes. This little substitution will also help to lower the total calories of this recipe.
